  1. Add the chickpea rice to a saucepan of simmering water and cook for 11 minutes.
  2. In the meantime heat a frying pan with a glug of olive oil and fry the onion for a few minutes until soft.
  3. Then add the red pepper, garlic and herbs and cook again for a few minutes until soft.
  4. Add the chopped spinach a minute or so before serving.
  5. Drain and rinse the chick pea rice and mix in with the vegetables, and season.
  6. Serve with chicken, fish, seafood or tofu.
