Instructions
  1. Make the salted date caramel by blitzing the pitted dates, almond butter, vanilla essence and salt in a mini blender. Add 3-4 tbsp of the liquid from the soaked dates. Blitz again until you get a smooth caramel-like consistency, then set aside.
  2. Chop the bananas into small circles about 5mm thick and add a dollop of date caramel to half of them. Sprinkle with hulled hemp and pop another banana round on top to make a sandwich. Place these in the freezer on a tray for a couple of hours, or overnight.
  3. Melt the chocolate and coconut oil together then dip the frozen banana bites into the melted chocolate to cover them. Often the chocolate sets straight away, otherwise pop the chocolate covered banana bites back into the freezer for 15-20 minutes to set.
  4. Store in the freezer bagged or in an airtight container for up to 3 months. You can eat these frozen direct from the freezer or you can let them defrost for a couple of minutes first before taking your first bite.
Recipe Notes
  • You can use other nut butters like cashew, hazelnut, or peanut. You can also try using delicious Resilient Nutrition Calm Cinnamon and Cashew Nut Butter instead of the almond butter for an extra delicious bite with a little bit of calm thrown in!
  • Nut Free – swap almond butter for tahini (sesame paste) or sunflower butter
  • Dairy Free – use a vegan chocolate like Moo Free
